Princess Cupcakes

Had a request for some Princess Cupcakes that were egg free, and icing sugar free. This was a really good challenge because it really had me thinking outside of the box. My first reaction was the frosting... I didn't think you could make frosting without it!! Crazy, but as it turns out you totally can!  I've included all the links for both the frosting and cupcakes below.

Michael's Crafts have these Princess liners that look like crowns.  I got some plastic princess cutouts and put them on top.  The icing was swirled purple and pink. Got to use the Batter Babies to separate the colors and they came out great!
