Princess Cupcakes

Had a request for some Princess Cupcakes that were egg free, and icing sugar free. This was a really good challenge because it really had me thinking outside of the box. My first reaction was the frosting... I didn't think you could make frosting without it!! Crazy, but as it turns out you totally can!  I've included all the links for both the frosting and cupcakes below.

Hamburger Cupcakes

These so far have to be the most fun cupcakes I've made so far.  You will get everyone looking twice when they realize there cupcakes!

If you are in a hurry to make these you can totally use some box mixes for brownies and cupcakes.  The French fries are made with a pound cake loaf, but you can buy one from your local grocery store in the bakery department.

Easter Cupcakes

Easter is such a wonderful holiday for beautiful pastel colors. I was out shopping and saw a rack of shirts that were literally every color that sums up Easter and decided that I must make cupcakes with them.

The cupcakes are your regular yellow mix, and then I made some Butter Cream Frosting that was tinted pastel colors - purple, pink, yellow, and green.  Michael's Craft store sold these really neat cupcake liners that fold together to form a Easter basket.

St. Patrick Day Cupcakes

March 18, 2013

Happy St. Patrick Day!!

These cupcakes were a lot of fun to make. I got to try out my new Batter Babies, they fit into your cupcake tin and allow you to put two different colors into the same cupcake. They actually came out really nicely and I was surprised how the two colors didn't run into each other.  I then made a Baileys Irish Cream Frosting, and it was so light and fluffy and was also probably the most "fun" I've had making cupcake frosting before ;)

Coming Up - St. Patty's Day

My next project i'm working on is going to be St. Patrick Day cupcakes with Baileys Irish Cream Frosting.  Sounds good right? Well to top that off I'm going to try making them green and white too. I'll post it all up probably tomorrow.

Reese Puffs & Cinnamon Toast Crunch Muffin Mix

Mar. 4, 2013

That's right... You'r eyes are not deceiving you... REESE PUFFS & CINNAMON TOAST CRUNCH muffin mix.

The local Wal-Mart started carrying these and I had to do a double take when I saw these. I just couldn't believe it!  They were located in the baking aisle with the other cake/cookie mixes.  The Cinnamon Toast Crunch ones were a bit "meh..." for me. They tasted mostly like brown sugar, and didn't really have any flavor to them.  The Reese Puff muffins were way better, and I would recommend getting this one to try at least once.

Pink Shirt Day! (Anti Bullying)

Feb 27, 2013

Thankfully I have never been bullied in my life, but I have friends that have been bullied for years. So to help bring awareness to the issue of bullying, I decided to make some PINK cupcakes for work.  These cupcakes came out really nicely.  I used "Electric Pink" food gel coloring, and WOW! while making them it looked like I had bubble gum :P
